Vegan Tuesdays

I should have been better prepared today for this post but since the guys just got back from a week-long road trip I haven’t had too much time to prepare a nice vegan meal to share with you all.   I do however, have a great meal that my roomie Breanna and I cooked a week ago.    This has to be one of my favorite vegan meals and it is super easy to make.   I have to give credit where credit is due so I will be giving you links back to the recipes for you to check out.  Simply click on the picture and it will take you right to the website.

The first part of this meal was Roasted Portobello Mushrooms.  I love eating these because aside from being YUMMY, they have a meaty flavor and can satisfy even meat lovers.   I tend to eat these as burgers too, just add a little avocado and some sweet potato fries on the side and you are good to go.   If you aren’t vegan and are ok eating cheese, goat cheese is a must to try with a Portobello burger.   That aside, this dish is as easy as it gets.   You start by cleaning the portobellos then throw them either in a zip lock back or bowl to marinate for as long as you like.   You can add a bit of oil, vinegar, salt, pepper and your favorite spices such as oregano and thyme.  Once they are done marinating you  bake them in the oven for about 40-50 minutes. Viola!  You are now ready to eat a delicious vegan dish that is heart healthy.

The next part of this meal was Brussels Sprouts with Balsamic and Cranberries.  The recipe to this one is a bit more specific so you can be find it by clicking on the picture.  I have to give Breanna credit for introducing me to this amazing side dish!   It is sooo good and I can’t wait to make it again!
